Ingredients: For the Slaw Base
  • Cabbage: 4 cups of your favorite cabbage mixture, thinly shredded or prechopped bags to make it easier.

  • Peaches: 2 ripe but firm peaches, cut into thin matchsticks

  • Green Onions: 3 scallions, thinly sliced

  • Cilantro: ¼ cup fresh cilantro, chopped

For the Pepper Jam Dressing
  • Pepper Jam: ⅓ cup Sassy & Bold pepper jam

  • Apple Cider Vinegar: 3 tablespoons

  • Mayonnaise: 1 tablespoons (or substitute olive oil for a lighter, vinaigrette style)

  • Lime Juice: 1 tablespoon, freshly squeezed

  • Salt and Pepper: To taste

  • Whisk the dressing: In a large mixing bowl, combine the pepper jam, apple cider vinegar, mayonnaise, and lime juice. Whisk until completely smooth.

  • Combine the base: Add the shredded green cabbage, red cabbage, sliced green onions, and fresh cilantro to the bowl with the dressing.

  • Toss gently: Toss the ingredients together until the cabbage is evenly coated in the dressing.

  • Fold in peaches: Gently fold in the fresh peach matchsticks last so they do not break down or get mushy.

  • Season: Taste the coleslaw and add a pinch of salt and cracked black pepper as needed.

  • Chill and serve: Cover and refrigerate for at least 30 minutes before serving to let the flavors meld together.
